Ingredients:
Pie Crust:
- 2 cups all-purpose flour - 1 teaspoon salt - 1 teaspoon sugar - 2/3 cup vegetable shortening - 5-7 tablespoons cold waterFilling:
- 2 cups fresh or frozen fruit - 2 tablespoons all-purpose flour or cornstarch - 2-4 tablespoons sugar, depending on the sweetness of the fruitInstructions:
Preparing the Pie Crust:
1. In a medium bowl, mix together the flour, salt and sugar. 2. Cut in the shortening until the mixture resembles coarse crumbs. 3. Add the cold water, 1 tablespoon at a time, stirring with a fork until the dough comes together. 4. Divide the dough into two equal pieces. 5. On a lightly floured surface, roll out one of the pieces of dough into a circle large enough to fit into a 9-inch pie plate. 6. Place the dough in the pie plate and trim the edges. 7. Roll out the second piece of dough into a circle large enough to fit over the top of the pie plate.Assembling the Pie:
1. Preheat oven to 375 degrees Fahrenheit. 2. In a medium bowl, mix together the fruit, flour or cornstarch, and sugar. 3. Pour the filling into the pie crust. 4. Place the top crust over the top of the pie. 5. Trim the edges and flute or crimp the edges. 6. Cut several slits in the top of the crust to allow steam to escape. 7. Place the pie on a baking sheet and bake for 40-50 minutes, until the crust is golden brown and the filling is bubbly.Making a Pie Container With Lid:
1. Roll out the remaining dough to a larger size than the pie plate and cut in half. 2. Place one half in the bottom of the pie dish. 3. Place the filling over the dough and cover with the second half of the rolled out dough. 4. Trim the edges and flute or crimp the edges. 5. Cut several slits in the top of the crust to allow steam to escape. 6. Place the pie on a baking sheet and bake for 40-50 minutes, until the crust is golden brown and the filling is bubbly.
