  • 4 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups buttermilk, at room temperature
  • 1/2 teaspoon purple food coloring
  • 1/2 teaspoon pink food coloring
  • 1/2 teaspoon green food coloring
  • 1/2 teaspoon yellow food coloring
  • 2 cups (4 sticks) unsalted butter, at room temperature
  • 6-7 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons heavy cream or milk

Instructions

  1. Preheat the oven to 350 degrees F. Grease and flour three 8-inch round cake pans and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  3. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, mixing until each one is fully incorporated. Add the vanilla and mix until combined. With the mixer on low, add the flour mixture in three parts, alternating with the buttermilk and beginning and ending with the flour mixture. Mix until just combined.
  4. Divide the batter evenly among the three prepared pans. For the pink cake layer, add 1/2 teaspoon pink food coloring to one of the cake pans. For the purple cake layer, add 1/4 teaspoon purple food coloring to one of the pans. For the green cake layer, add 1/4 teaspoon green food coloring and 1/4 teaspoon yellow food coloring to the remaining pan. Mix each pan until the food coloring is fully incorporated. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  5. Remove the cakes from the oven and allow to cool for 10 minutes. Carefully remove the cakes from the pans and transfer to a wire rack to cool completely before frosting.
  6. To make the frosting, in the bowl of an electric mixer fitted with the paddle attachment, cream the butter on medium speed until light and fluffy, about 3 minutes. With the mixer on low, add the powdered sugar in three parts, mixing until fully incorporated. Add the vanilla and salt and mix until combined. Add the heavy cream or milk and mix until the frosting is light and creamy. If the frosting is too thick, add additional cream or milk, a teaspoon at a time, until the desired consistency is reached.
  7. To assemble the cake, place one layer of the pink cake on a cake stand or serving plate. Spread 1/3 of the frosting over the top. Top with a layer of the purple cake, spreading another 1/3 of the frosting over the top. Top with the remaining layer of the green cake and spread the remaining frosting over the top and sides of the cake.
